This dairy-free, gluten free, sugarless pancake recipe is perfect for those who are looking for healthier breakfast alternatives, but don’t want to give up the joy of cutting into fresh pancakes in the morning. Oats are rich in antioxidants and are very filling, while bananas are good for heart health and are a great source of vitamin C. Ingredients:
1 medium ripe banana
1 egg
1/4 cup dairy free milk (we recommend almond milk)
1/2 tsp vanilla extract
1/2-3/4 cup rolled oats
1 tsp baking powder
1/4 tsp ground cinnamon
Pinch of salt
Olive oil, for frying
Special Equipment:
Blender
Microwave (optional)
Steps:
Add all ingredients into the blender and blend until ingredients are fully combined.
Lightly coat a frying pan with olive oil over medium heat. Once pan is heated up, drop spoonfuls of batter into the pan at desired size. Cook until you can see small bubbles breaking the surface, usually along the edge.
Flip until both sides are golden brown, and lower heat to medium low if pancakes are starting to brown too quickly.
Repeat steps 2 and 3 with remaining batter.
Serve pancakes warm with desired toppings such as syrup, butter, nuts or if looking for a healthier alternative, our 30 second berry compote!

Spoon frozen berries into a microwave-safe bowl.
Microwave berries for about 30 seconds-1 minute, depending on microwave wattage.
