Banana-Kale Smoothie

This creamy and rich smoothie is completely vegan, and rather filling, while being one of the healthiest breakfast options available. The very prominent banana, with a combination of mango, pineapple and strawberry, gives this smoothie a rich, tropical flavor. The distinctive green color is, obviously, the kale, which makes this smoothie so much healthier. You can also add yogurt for a creamier version, or coconut yogurt if you still want to go dairy-free.

Serves: 1

Prep time: about 20 minutes

 

Ingredients:

  • 3/4 cups chopped kale

  • 3/4 cups orange juice

  • 1/4 cup frozen mango chunks

  • 1/4 cup frozen pineapple

  • 1/4 cup frozen strawberries

 
  1. Place the kale and orange juice in the blender and blend on low speed for 1-2 minutes or until the kale chunks are barely visible.

  2. Add the fruit and blend until smooth.

  3. Enjoy!
