BBQ Chicken Bacon Skewers

No matter if you're doing a summer barbeque, or if you are simply making lunch for family or friends, this simple recipe will be a hit.

This BBQ chicken bacon recipe is actually taken from Tasty, and we simply came up with an alternate method of cooking it. We are going to explain it here, as well as give the original method for those who prefer to use an actual grill.

This recipe is very useful if you want a quick and tasty meal-prep lunch. You can either prepare the chicken and marinate it in the fridge overnight, or you can even prepare the skewers fully, and stick them in the fridge.

It's quick, easy and very unlikely to mess up.

Prep time: about 30 minutes

 

Ingredients:

  • Approximately 455g (1lb) Boneless, skinless chicken thighs or breasts

  • 286g (1 cup) BBQ sauce (we used sweet and savory, but you can pick any kind you like)

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 8 strips of bacon

 

Special equipment:

  • 8 bamboo skewers

  • A grill, or a cast iron grill pan

 
  1. Cut the chicken into one-inch cubes, paying attention to carefully removing all of the white parts. (Tip: it's much easier to cut meat with a very sharp knife, so, if possible, we recommend sharpening your knife before cutting, unless you have recently sharpened it.)

  2. Place the chicken pieces into a small mixing bowl. Add the BBQ sauce, salt and pepper. Mix until evenly combined. (Tip: at this point you can cover the bowl and set it in the fridge for up to 24 hours, if you want to cook it at at another time.)

  3. Pierce one end of a bacon strip with the tip of a skewer. Add a piece of chicken and fold the bacon over it, threading it back onto the skewer. Move the piece down the skewer and thread on another piece of chicken, covering it with bacon. Repeat until the whole skewer has been covered in chicken with bacon.

  4. Repeat the process onto the rest of the skewers with the remaining chicken and bacon. (Tip: If you want an even faster lunch you can put the chicken in the refrigerator at this point, so that all you have left to do is cook it.)

5.1 The first cooking option is on the grill. If you are using this option then preheat the grill to medium heat. Grease the preheated grill using tongs and a paper towel with oil. Grill the skewers with with the lid closed for about 12-18 minutes, flipping them halfway.

5.2 If you do not own or do not like to use a grill, you can use a cast iron grill pan. Set the stove to medium-high heat, and grease the pan with cooking oil. Cook the skewers covered for 10-15 minutes, flipping the halfway. (Tip: if you do not own a lid that fits your grill pan, you can cover it with a baking sheet.)
