Ingredients:
1/2 avocado
1 slice of bread of choice (sourdough, rye, Ezekiel, etc.)
1 egg
4-6 cherry tomatoes
Salt (to taste)
Pepper (to taste)
Paprika (to taste)
Special equipment:
pot (for boiling)
Boil a pot of water on high.
On a toasted slice of bread, spread or lay out slices of half an avocado.
Once bubbles start breaking the surface of the boiling water, drop in a (preferably room temperature) egg and boil it for about 5 mins 15 sec-5 mins and 30 sec. Remove egg from the pot with a spoon and run it under cold water for about 2-3 minutes to ensure that the cooked egg white doesn’t stick to the shell while peeling.
Place your carefully peeled egg on your avocado toast and top with sliced cherry tomatoes. Sprinkle some salt, pepper and paprika to taste. Enjoy!
